All operators that prepare or handle food for sale or service, regardless of whether they hold a permit from the Ministère de l’Agriculture, des Pêcheries et de l’Alimentation (MAPAQ), are required to ensure that one or more employees have completed the course and that food hygiene and safety standards are applied. The Food Handlers and Food Establishment Managers courses are mandatory and subject to regulation. They must be completed in order to receive the MAPAQ food hygiene and safety certification.
